Ingredients
Stuffing
100 g Mung Beans
1/2 Cup Sugar
20 g Peanut Oil
Inner Stuffing
1 TBSP Veggie Minced meat
2 Shallots
1 TBSP White Sesame Seeds
Seasoning
1 TBSP Soy Sauce
1/2 TBSP Sugar
1/4 TSP Salt
Pinch of white pepper
Flour Dough
80 g All-purpose Flour
10 g Sugar
30 g Clarified Butter
45 g Cold Water
Cake Dough
80 g Cake Flour
40 g Clarified Butter
Directions
Stuffing1. Wash mung beans thoroughly. Combine beans with the cold water and allow it to sit for 2 hours.
2. Steam green beans in an electric pot/electric rice cookers (about 1 cup of water inside the pot) until beans are soft.
3. Put peanut oil and bean puree in a frying pan and cook over low heat for 5 min until puree begins to dry.
4. Add sugar to the bean puree. Mix well in the fry pan for 20 minutes. Make sure to stir fry the mixture continuously to prevent burning.
Inner Stuffing
1. Place white sesame seeds in a plastic bag and grind with a rolling pin.
2. Cut shallots into small pieces and stir fry.
3. Add veggie minced meat and seasoning.
4. Divide mixture into 6 servings.
Flour Dough
1. Combine sugar and butter. Mix well and sift flour into mixture.
2. Pour water and mix well with hands for 5-6 minutes. Cover and put aside for 30-40 minutes.
3. Divide into 6 pieces.
Cake Dough
1. Sift the flour and combine with butter.
2. Mix well.
3. Cover the mixture and put it aside.
4. Divide dough into 6 pieces.
General Preparation
1. Preheat oven to 350°F.
2. Place the cake dough on top of dough 1. Mix dough throughly by rolling the mxture using a rolling pin. Roll the dough into a cylinder shape with the flour dough on the outside. Set aside and allow the mixture to sit for 15 minutes.
3. Flip the dough and repeat step 1.
4. Take the stuffing and make it into a small pocket. Add the inner stuffing into the pocket and seal into a ball.
5. Take the dough and flatten into a round thin sheet with the flour dough on the bottom.
6. Add the ball of stuffing and place into the middle of the dough. Wrap the dough into a small bun.
7. Decorate the bun with red food coloring.
8. Place the buns onto a baking sheet and bake for 10 minutes. Afterwards, adjust the temprature to 300°F and bake for an additional 15 minutes.
9. Allow the Mung Bean cake to cool and enjoy.
